Guyanese Sponge Cake

Ingredients.
3 cups ( 360 grams ) all purpose flour (2 3/4 cups)
1 pound ( 453 grams ) margarine
3 cups (600 grams ) sugar (white)
12 eggs
1 tbsp. ( 14 grams ) baking powder
1 tbsp. ( 13 grams ) essence (Almond flavor)
1/2 grated nutmeg  

Preparation
1. Cream margarine and sugar together in a bowl
2. Eggs add essence mix together in another bowl
3. Pour egg mixture into cream mixture
4. Add flour in small portions 
5. Add baking powder 
5. mix until spoon sticks (stands up)  in mixture means you have enough flour


bake 50 deg f for 40mins +

1 packet quick rise yeast 

1/3 cup butter, melted

1.5 cups warm milk 

4tbsp brown sugar 

2tsp vanilla extract 

1/2tsp salt

3.5 cups sifted flour 



in a warm bowl 

add melted butter, warm milk and yeast, valilla extract and brown sugar, 


sifted flour and salt 

30 mins



If using traditional yeast, proof it first with ½ cup warm water and 1 tbsp sugar for 10 minutes until foamy. Reduce the warm milk to 1 cup so the total liquid stays the same and the dough doesn’t become too wet.
