chipotle Chicken








Recipe: 
Marinade:
1 Tsp Cumin Powder
4 Garlic Cloves - Minced
1 Tsp Dried Oregano
2 Tsp Kosher Salt
1 Tsp Black Pepper
1 Tablespoon Chili Powder
2 Tablespoons Olive Oil or Sunflower Oil
7 Oz Can of Chipotle Peppers in Adobo Sauce
3/4 Cup of Water

Chicken:
4-6 Boneless, Skinless Chicken Thighs.

A bowl from Chipotle Mexican Grill is basically a burrito without the tortilla. You build it with layers like:

  • Base: white rice, brown rice, lettuce, or no base
  • Beans: black or pinto
  • Protein: chicken, steak, barbacoa, carnitas, sofritas, or fajita veggies
  • Toppings:
    • fajita veggies
    • fresh tomato salsa
    • roasted chili-corn salsa
    • tomatillo green/red salsa
    • sour cream
    • cheese
    • guacamole
    • lettuce
    • queso blanco

A common bowl might be:

White rice + black beans + chicken + fajita veggies + corn salsa + cheese + guac + lettuce


 Here is how I marinated the chicken:

I used 80 pounds of chicken thighs

I marinated in 3 cups of mayo 

1 can of chipotle peppers in adobo sauce(l blend it in a blender with the mayo and some water)

Season with taco seasonin, salt, garlic powder, cumin, paprika, Johnny seasoning, and garlic salt. 

and squeeze in to limes.

Flatten the chicken out onto sheet pans and bake on 450 for 20 minutes or till the chicken reaches temperature of 165.

Mahamborg

 

Ingredients:

1 cup all-purpose flour 1 stick of salted butter 2 cups evaporated milk 1 cup orange soda 1 cinnamon stick A few cloves 1 tsp vanilla extract 1 tsp nutmeg 1/2 cup sugar 1/4 cup raisins 1/4 cup cherries

add milk in a pot and sugar, clove cinnamon, nutmeg, vanilla extract, raisin, and cherry adn slowly boil

in pan add 1 stick butter and cup of flour .. and stir for 10 mins.

add boiling milk milk

stir until all water disappear.

Ingredients

  • 1 pound boneless skinless chicken breast (2 to 3 breasts)

Greek Lemon Chicken Marinade

  • ¼ cup olive oil
  • 1 lemon juiced (about 3 tablespoons juice)
  • 2 garlic cloves minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Cilantro Lime Chicken Marinade

  • ¼ cup olive oil
  • ¼ cup cilantro leaves chopped
  • 2 limes zested and juiced (about ¼ cup juice)
  • 2 garlic cloves minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Honey Mustard Chicken Marinade

  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 teaspoons apple cider vinegar
  • 1 garlic clove minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Teriyaki Chicken Marinade

  • ¼ cup tamari soy sauce (or coconut aminos)
  • 1 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 green onion thinly sliced
  • 2 teaspoons minced fresh ginger (about ½-inch piece)
  • 2 garlic cloves minced

Fajita Chicken Marinade

  • ¼ cup olive oil
  • 1 lime zested and juiced (about 2 tablespoons juice)
  • 1 garlic clove minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Italian Chicken Marinade

  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 teaspoons Italian seasoning
  • 2 garlic cloves minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon kosher salt

Instructions

  • Make the marinade. Choose a chicken marinade flavor and place all the ingredients (minus the chicken breast) into a medium bowl and whisk to combine.
  • Marinate the chicken. Place the chicken breasts into a glass container or sealable bag. Pour the marinade on top of the chicken, then seal the bag or cover the bowl with a lid or plastic wrap. Let the chicken marinate in the refrigerator for at least 30 minutes or up to 8 hours. *See notes above for cooking and serving ideas.

  • The nutritional information is for the Greek Lemon marinade
  • Each of these chicken breast marinade recipes is enough marinade for 1 to 1.5 lbs. of boneless skinless chicken breast.
