Guyana Style - Mango Aachar

Mango Aachar

Ingredients 

  • 1 large green Mango
  • 10 weri weri pepper
  • 10 clove of garlic
  • Ground Kalongi
  • Geera 
  • Salt to taste
  • Mustard oil 
  • 1/2 small onion
  • Graham Masalla  


Method:


  1. Peel skin of Mango
  2. Grate Mango on hand grater or slice for blender
  3. blend mango 
  4. in a bowl add mango and salt 
  5. use cheese cloth and squeeze the mango - separate juice from fibers
  6. put mango fibers in a bowl add some salt
  7. blend onion, garlic and peppers together and add to bowl 
  8. Add kalongi and geera into blow and mix together
  9. Add Mustard oil into mixture and continue to mix
  10. Bottled and put out on the sun
