Roti
2 lbs plain or all purpose flour
2 tsp baking powder
1 tbsp oil or ghee
- Mix the above ingredients with enough water to make a soft and pliable dough.
- Divide dough into 15 small balls. (loys)
- Roll out each ball into a flat circle.
- Oil liberally and sprinkle with dry flour evenly over surface,
- Fold by bringing together the flat dough into a smaller ball and tuck it.
- Let dough relax for about half to 1 hour.
- Heat griddle or tawa.
- When hot roll out rotis round and thin then cook turning over and oiling both sides.
- Cook evenly.
- When bubbles begin to show, roti is done.
- Take off and clap well.
- Serve hot or cold
